Dong Ding
Taiwan
The classic Taiwanese oolong—medium roast, notes of honey and stone fruit, endlessly resteepable.
The Story
Dong Ding Mountain in Nantou County is where Taiwanese oolong tradition began. A scholar brought tea cuttings from China's Wuyi Mountains in the 1800s, and they thrived in Taiwan's climate. Traditional Dong Ding is medium-roasted, creating a balanced profile between the green freshness of high-mountain oolongs and the deep warmth of heavily roasted styles.

Brewing Tips
Traditional Dong Ding benefits from boiling water. The leaves are forgiving—this is a great oolong for learning gongfu brewing. Later steeps bring out the roasted character; early steeps highlight the fruitiness.
