Zanjabil Karak
Gulf Region
Fresh ginger adds fire and warmth to the classic. The karak for cold mornings and when you need something with a kick.
The Story
Zanjabil—ginger in Arabic—transforms karak into medicine and comfort combined. This variation is beloved on winter mornings, when the air conditioning has been too cold, or when a cold is coming on. The ginger cuts through the sweetness, adding brightness and heat. Construction workers, taxi drivers, and office workers alike reach for this when they need warming from the inside out.

Brewing Tips
Crush or slice the ginger to release more flavor. Fresh ginger only—dried won't give the same bright heat. Add the ginger early so it has time to infuse. Adjust the amount based on how much heat you want. Some add a touch more sugar to balance the ginger's bite.
