The Story
Huo Shan (Fire Mountain) has produced yellow tea since the Ming Dynasty. This tea nearly went extinct during the 20th century, with production reviving only in the 1970s. Its lighter yellowing process creates a tea that's brighter than other yellows but smoother than greens—a perfect introduction to this rare category.
