Jun Shan Yin Zhen
Hunan, China
The emperor's tea—rarer than rare. Honey-sweet with a silken texture and lingering orchid finish.
The Story
Jun Shan Yin Zhen comes from a single island in Dongting Lake, where only a few kilograms of authentic tea are produced each year. It was once reserved exclusively for emperors. The 'sealed yellowing' process, where the tea is wrapped and allowed to oxidize gently, creates its distinctive mellow character. Finding real Jun Shan is like finding treasure.

Brewing Tips
Use a tall glass and watch the buds stand upright, sink, rise again—a mesmerizing dance. Don't rush this tea; it rewards patience. Authentic Jun Shan is expensive; if it's cheap, it's probably green tea.
