The Story

Also called Bai Hao or White Tip Oolong, this tea requires a pest. Tea jassid leafhoppers nibble the leaves, triggering a chemical defense that creates remarkable honey-like sweetness. Once considered damaged and worthless, these 'bug-bitten' leaves became Taiwan's most unique and prized oolong. It's heavily oxidized, closer to black tea in processing.
