The Story
Named for the Buddhist bodhisattva of compassion, Tie Guan Yin is one of China's most beloved teas. A poor farmer discovered it after praying at a decrepit temple; he nursed the wild tea bush back to health and shared it with his village. Modern TGY comes in green (lightly oxidized) and traditional (more roasted) styles—both are extraordinary.

Brewing Tips
The tightly rolled balls need hot water to open. Rinse briefly to wake the leaves. Green-style TGY can use slightly cooler water (185-195°F). Watch the leaves unfurl—they're beautiful.
